Carrot sweet potato casserole
¾ cup grated carrots
1 and 1/4 cups mashed, baked sweet potatoes (best done with American sweet potatoes)
¼ cup flour with dash of baking powder and salt
¼ cup vegetable oil and ¼ stick margarine
1 cup milk
¼ cup brown sugar
½ grated nutmeg
small piece of fresh ginger grated
- Sift flour, baking powder and salt into mashed, baked sweet potatoes.
- Add other ingredients to mixture.
- Mix until well blended4. Bake in greased casserole dish for 45 min to 1 hour at 350 degrees
